Eggs Florentine consists of poached eggs, Hollandaise sauce, steamed spinach, and usually an English muffin although I think next time I’m going to try it with sliced French bread.
The following is a quick and fool-proof way to make a decadent Hollandaise sauce that is sure to impress!
In a sauce pan melt1.5 sticks butter
In a blender add
4 room temperature egg yokes
the juice of 1 1/2 lemons
1-2 pinches of Cheyenne pepper
slowly pour in the melted butter
and add salt and pepper to taste
Now just drizzle atop your poached egg, and spinach and don’t for get the grilled asparagus! YUM!!
Hollandaise is great with asparagus, grilled ham and cheese sandwiches, seared fish, and anything egg. Be creative with your sauce and let me know what you do with it!
